Mario’s extensive tenure in Salmon Dave’s kitchen has prepared him for the daunting task of orchestrating the constantly evolving fare. Chef Brown’s annual menu calendar begins with the Taste of N’Awlins, a Mardi Gras celebration lasting from Super Bowl to baseball season. Once the crack of the bat sounds, Alaskan Halibut and Wild Salmon are the high points of his springtime menu. Crabmeat, from throughout the country’s shores, highlights the cuisine of his Memorial Day menu introduction. The ever-popular “Maine Event” pays Autumn homage to the flavors of the New England with an annual authentic Lobster Bake. Once December is upon us, Mario Brown’s skillful twist on traditional cuisine for the holiday season gives reason for celebration.
